What is NOT ice cream?

Ice cream is not the same as gelato, while sherbet and sorbet are hardly alike. (Well, actually it depends on who you ask.)

Nevertheless, I'll tell you what I know based on my own understanding of various frozen desserts.

So, here are some basic differences any blooming ice cream aficionado should know:

1. Gelato: Contains 7% or less of butterfat and has 50% less air in it compared to ice cream, giving it a denser texture.

2. Sorbet: Dairy-free (no milk, no cream) and usually made from fruit, sugar and water.

3. Sherbet: Made from fruit puree and milk.

4. Granita: Water-based dairy-free ices made from still-freezing.
