Banana ice cream: The simplest fruit ice cream


Alright, let's just cut to the chase.

Here is what you need to make banana ice cream at home:

Before you make the ice cream custard, mash 1-2 ripe bananas (those with brownish spots) with 1-2 teaspoons of lemon or lime juice using a fork to make a banana puree. The lemon/ lime juice will prevent the banana from oxidising too much and beoming overly brown (and look unappetising).

Banana should be finely mashed and when that is done, make the custard.

1. Mix 2 egg yolks and 50g of sugar until pale yellow

2. Heat 140ml of milk in a pot

3. Pour heated milk into egg-sugar mixture

4. Transfer egg-sugar-milk mixture back into pot and cook until thickened

5. Pour completed custard through sieve into banana puree and 60ml cream

6. Whisk everything thoroughly and leave ice cream custard to set in freezer

7. Whisk it thoroughly every 30 minutes and repeat at least twice

Makes about 330ml of ice cream

Feeling a bit adult? You can add a dash of rum to make the ice cream a tad more tropical and flavourful during the final stages of churning. Alternatively, you can always scoop the banana ice cream into a bowl and drown it in rum.

You can also try substituting regular sugar with brown sugar. This helps give this fruit ice cream an extra flavour from the molasses found in brown sugar.
