How to make Andes Mint Choc Ice Cream!


Alright. This Andes Mint Choc Ice Cream is part of the Make Your Own Chocolate Ice Cream series whereby you ransack your fridge for any leftover eating chocolate and convert them into ice cream.

And here's what you need:
- 8 to 10 pieces of Andes Mint Choc (kind of like the ones seen above)
- 2 egg yolks
- 100ml milk
- 100ml cream
- 25g to 30g sugar

Here's what you got to do:
1. Heat milk in pot and melt 3 to 4 pieces of Andes mint chocs

2. Beat sugar with yolks until smooth and pour heated milk-Andes mint choc mixture into yolk-sugar mixture

3. Transfer back into pot and cook until smooth and thick enough to coat back of wooden spoon

4. Pour through sieve into cream and handchurn ice cream custard

So, 2 hours later, we're done!


Finely chop up the remaining 6 or 7 pieces of mint choc and mix them into semi-frozen ice cream for a bit of texture and additional mint taste! The amount of chocolate mints to add is according to taste.

How to make sure your Tic Tac dissolves

Someone left a comment on a previous post about using Tic Tacs to make mint ice cream only to realise that Tic Tacs do not dissolve too well when mixed into a hot ice cream custard.

Well, Tic Tacs, after all, are pretty hard candy. To make sure they dissolve completely, I suggest breaking them into finer pieces first. You can do this by putting them in a durable plastic bag and go after them with something heavy. Such as a rolling pin.

Or else, you can put them in the microwave on high heat for 10 to 20 seconds. When super heated, Tic Tacs will be easier to melt when stirred into a hot custard.

Use mint flavour Tic Tac in ice cream (With dark chocolate shavings)

What makes an effective and cheap substitute for mint flavouring?

The answer: Mint flavour Tic Tac!

Mint flavour Tic Tac gives a surprisingly easy and light mint taste after it is dissolved in ice cream. The trick is to use the Tic Tac conservatively. (You can always add more if you like ice cream that tastes like toothpaste.)

Here is the recipe:
150ml milk
70ml cream
2 yolks
25g to 30g sugar
25g shaved dark chocolate

4 to 5 mint Tic Tacs

Now you got your ingredients, you can get to work:
1. Heat 150ml milk in pot
2. Mix eggs and sugar in a bowl
3. As milk heats up but stops short of boiling, pour heated milk into egg-sugar mix
Stir thoroughly and swiftly as you pour the heated milk and return egg-sugar-milk mix back into pot
4. Cook until custard thickens and coats back of wooden spoon
5. Strain custard through metal sieve
6. Dissolve 4 to 5 mint Tic Tacs into custard while it is still warm
7. Mix 70ml cream into custard
8. Leave custard to set in freezer for about 30 minutes
9. Stir shaved dark chocolate until evenly distributed
10. Remove from freezer every 30 minutes for a good whisking

Makes about 220ml ice cream. Serves two.

Here's the fun part: Don't tell whoever you giving this ice cream to that it contains Tic Tacs. After they are done, let them in on it.

They'll be surprised. Well, I was.
