How do I use walnuts in ice cream?


Simple. You get walnuts (or any other types of nuts) raw and fresh. To get them nuts fragrant and aromatic, you need to cook them. Toasting in an oven is a fast and efficient method.

Heat oven to 175 degrees Celsius. Lay a piece of baking paper on the tray. Chop each walnut up evenly into 3 or 4 smaller pieces before laying them out on the tray. Toast them for about 15 minutes. Sprinkle some salt if you like. Make sure they are evenly toasted. The walnuts should release their natural fragrance - feel them cooking in their own oils and goodness.

Avoid using raw nuts that smell of stale oil. It is an indication that they are not fresh.

To add walnuts into homemade ice cream, do so like you would during a mix-in: Add the nuts at the final stage just when the ice cream is setting and about firm enough. Avoid mixing the nuts in when the ice cream is still slushy. And freshly roasted nuts should be cooled to room temperature or slightly chilled before being added to ice cream.
